Healthy Fruit Tarts

Fresh berries, yoghurt and cashews in a tart – what’s not to love? Our Healthy Fruit Tarts are a delightful low-sugar dessert that’s even free of sugar substitutes.

Makes: Three tarts
Time: 40 minutes

Ingredients

Crust

  • 1 1/2 cups cashews
  • 1 cup raisins
  • 1 teaspoon vanilla extract
  • pinch of salt


Filling

  • 1 cup vanilla honey greek yogurt
  • 250g fresh berries (you can substitute with your choice of fruit)


Method

Crust
In a food processor, pulse together cashews, raisins, vanilla and salt. The mixture is ready when the components have broken down and the dough sticks together when pressed between your fingers. Grease 3 (12cm) round tart pans, pressing the dough evenly into each one. Pop pans into the freezer for 30 minutes to an hour.

Assembly
Remove tarts from the freezer. Dollop about 1/4 cup of yoghurt into each tin. Top with a generous serve of berries. Add a bit of honey on top if desired. Serve immediately.
