Healthy berry fruit tart

Fresh berries, yoghurt and cashews in a tart – what’s not to love? Our Healthy Fruit Tarts are a delightful low-sugar dessert that’s even free of sugar substitutes.

Makes: Three tarts
Time: 40 minutes

Ingredients

Crust

  • 1 1/2 cups cashews
  • 1 cup raisins
  • 1 teaspoon vanilla extract
  • pinch of salt


Filling

  • 1 cup vanilla honey greek yogurt
  • 250g fresh berries (you can substitute with your choice of fruit)


Method

Crust
In a food processor, pulse together cashews, raisins, vanilla and salt. The mixture is ready when the components have broken down and the dough sticks together when pressed between your fingers. Grease 3 (12cm) round tart pans, pressing the dough evenly into each one. Pop pans into the freezer for 30 minutes to an hour.

Assembly
Remove tarts from the freezer. Dollop about 1/4 cup of yoghurt into each tin. Top with a generous serve of berries. Add a bit of honey on top if desired. Serve immediately.

    I have a B.Applied Sc. (Viticulture) and a B.Applied Sc. (Wine Science).

    Are you aware that:

    1 Grapes are second only to dates as the fruit with the highest sugar concentration.
    2. As grapes dry their water content departs and they are then called raisins.
    3. Because of the loss of water raisins have sugar concentrations ratio to fruit weight similar to dates.
    4. Wine can be made from any fruit, as the yeast convert the sugar to alcohol.
    5. Grapes are usually used to make wine, because of their high sugar content in the juice
    6. Grapes are much easier to grow & harvest and cheaper to make wine from than dates.
    7. Thereby producing a high alcohol content beverage.

    Sugar is the main cause of obesity, and type 2 diabetes.

    My comment was about deceptively saying - Healthy Fruit Tarts are a flavoursome, sugar-free way to end your day, when that statement could encourage folk to become diabetic - I am and know what caused it - sugar.
