Shop-bought muesli bars often have a lot of hidden sugars and salts, so why not try making your own. It isn’t that difficult and you can add whatever you want.

Shop-bought muesli bars often have a lot of hidden sugars and salts, so why not try making your own. It isn’t that difficult and you can add whatever you want.

Ingredients

  • 115g rolled oats
  • 40g oat bran
  • 40g sunflower seeds
  • 50g flour
  • 100g dried fruit of your choice, coarsely chopped
  • 40g coarsely chopped nuts (pistachios have a great flavour)
  • 2 tablespoons toasted wheat germ
  • 90ml apple juice concentrate
  • 2 tablespoons soft brown sugar
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
     

Method
Preheat the oven to 180°C. Line a baking tray with greaseproof paper, leaving an overhang to make it easier to remove the bars when cooked. Toast the oats and the oat bran in the oven for about 10 minutes. Once toasted, place in a large bowl and add the nuts, sunflower seeds, flour, wheat germ, cinnamon and dried fruit.

In a small saucepan, combine the apple juice concentrate, brown sugar and honey and stir over a medium heat until sugar has dissolved. Pour the syrup over the oat mixture, stirring to coat.

Spoon the mixture into the baking tray and with a large spatula (or damp hands) press the mixture down until even. Bake for 20 minutes or until firm. Using the overhang, lift the cake from the tray and place on a wire rack to cool. Once cool, you can drizzle with natural yogurt or dark chocolate, then cut into 12 bars and store in an airtight container.

    You do realize that there are 4 items of sugar in this recipe ? Honey ,apple juice concentrate and dried fruit are all forms of sugar which when combined with the brown sugar makes this a very sweet option. Are you kidding about the hidden sugar comment ??
