A delicious and sweet dessert, this Honey and Rhubarb Cake is a delightful way to end a dinner party. It’s simple, quick and will have your begging for seconds.

 

Ingredients

  • 125g melted butter
  • 2 eggs
  • 175g of wheat flour
  • 1 1/2 teaspoons baking powder
  • Pinch of salt
  • 150g of honey
  • Juice of half a lemon
  • Zest of 1 lemon
  • 1 tablespoon milk
  • 200g rhubarb
  • 3 tablespoons brown sugar
  • Greek yogurt to serve 

 

Method

Preheat the oven to 180º C and grease and line the base and sides of a cake tin.

In a large bowl, melt the butter and add the eggs while whisking until light and fluffy. Next add the flour, baking powder, salt, honey, milk, lemon zest and juice to the bowl. Pour mixture into blender and mix thoroughly.

Pour into a greased cake tin. Cut the rhubarb into thick strips and lay on top of the mixture. Sprinkle the top with brown sugar.

Bake for 30 minutes in the preheated oven before setting aside to cool.

Serve with Greek yogurt.

    Yesterday I made raspberry custard.
    1 can of raspberries - strain berries - cook 4 stalks of rhubarb cut into 2" pieces in raspberry syrup - strain & add syrup into custard along with canned raspberries - puree - add some banana pieces into cooking custard - pour cooked custard into bowls - add some of the cooked rhubarb do not stir - drop in some frozen raspberries - cool & put into fridge.

    Today I will - cook some strips of orange peel without pith, in orange juice & a bit of sugar - add some pear segments & cook a bit more - add the rest of the rhubarb stalks & cook just a little more - to make a compote for cereal.

    p.s.
    I can make custard from scratch /eggs etc... -
    But don't be crazy - I used custard powder from a packet purchased at the S/mart - it works just fine.
