An easy dessert which is a firm favourite in Kaye’s family.

Icky-sticky pudding

An old favourite for dessert – who’s not a fan of the sticky date pudding? Try this recipe which has been in Kaye’s family for years.


  • 185g dates, chopped
  • 250ml water
  • 60g butter
  • 2 eggs, beaten
  • 185g self raising flour
  • 1/2 teaspoon vanilla essence
  • 1 tablespoon baking powder


  • 220g raw sugar
  • 6 tablespoons cream
  • 140g butter
  • 1 teaspoon vanilla essence


Place the dates in a saucepan, cover with water and bring to the boil. Remove from the heat and add the baking powder.

Cream together the butter and sugar. Add in the eggs one at a time and mix thoroughly, then carefully fold in the flour.

Stir the dates, liquid and vanilla essence into the mixture and blend well.

Pour into a prepared cake tin and bake at 180ºC for 30-40 minutes.
