Lemon Slice

Lemon Slice is a dessert so well-loved, it has had an entire planetary nebula named after it. Why not make a batch to share with friends, or to enjoy as a treat after tea?

1/2 cup sweetened condensed milk
100 g butter
200 g plain biscuits
1 cup desiccated coconut
1 lemon rind, grated

Lemon icing
2 cups icing sugar mixture
40 g butter, softened
1 lemon, juiced

In a small saucepan, cook the condensed milk and butter over low heat stirring until the butter melts. Place the plain biscuits in a food processer and process until the result is fine crumbs. Remove the crumbs and place in a separate bowl. Add two teaspoons of lemon rind and the coconut and stir through. Add the hot butter mixture and stir until well combined.

Grease a 15 cm x 25 cm – 3 cm deep pan. Press the biscuit mixture into the pan evenly and refrigerate for 1 1/2 hours.

While the biscuit mixture is setting, place the lemon juice, icing sugar mixture and remaining butter into a bowl. Beat with a wooden spoon or electric beater until smooth.

Remove the set mixture from the fridge and spread icing over the slice evenly. Place back in the fridge for a further 30 minutes until set. Cut into slices and enjoy.
