This icy treat is delicious on its own or served with fruit and it’s so easy to make.
Ingredients (serves 2)
- 250g thick Greek-style yoghurt
- 150g lemon curd (can be homemade or store-bought)
Place yoghurt in a large bowl, then stir the lemon curd through without mixing the two, so you end up with a ripple-effect. Place in a container and freeze overnight. Move frozen yoghurt into the fridge for half an hour before serving to allow it to soften.
Optional: Homemade Lemon Curd
Ingredients (makes 1 1/2 cups)
- 2 eggs, 2 egg yolks
- 3/4 cup caster sugar
- 1/3 cup chilled unsalted butter
- Zest and juice of two lemons
Place whole eggs, yolks and sugar into a saucepan away from heat and whisk until smooth. Put pan over a low heat and add butter, juice and zest, whisking continuously until thickened. Strain through a sieve into a sterilised jar. Lemon curd will keep for two weeks if refrigerated.
