Microwave Lemon Pudding for One

Hankering for a sweet and tangy treat? This microwave-friendly Lemon Pudding can be whipped up in no time at all – a perfect dessert for one! Simply double the ingredients to make an extra helping for a friend (or yourself).

Ingredients

  • 25g softened butter
  • 25g caster sugar
  • 25g self-raising flour
  • 1 egg
  • zest of 1/4 lemon
  • 1/2 teaspoon vanilla essence
  • 2 tablespoons lemon curd
  • crème fraîche or ice cream, to serve

Method
In a small microwaveable serving bowl, mix butter, sugar, flour, egg, lemon zest and vanilla together until smooth and creamy. Microwave on high heat for three minutes, stirring halfway through cooking. Mixture should rise and then set all the way through.

Next, heat the lemon curd in the microwave for 20 seconds and stir until smooth. Pour over the pudding. Enjoy immediately with a dollop of crème fraîche or scoop of ice cream.

    When there are so many serious issues directly affecting many thousands of senior Australian citizens these days, why is that your top story is a recipe for microwave lemon pudding for one? You have your priorities all wrong!

    Certainly not YLC top story of the day! The recipe is always the last link in the email for you to click on to read. If you change the order you read them in, that's your choice.
    I think it's nice they do give us recipes. It just annoys me (and others) when the recipe doesn't match the picture. Or it's loaded with sugar/fats etc in this age of obesity.

    Seriously !!!! I didn't see this recipe as a TOP story.
    yes there are a lot of things affecting Seniors these days and everyone.
    But sometimes a step back from reality and the simple things, help to take peoples minds off them. For people living alone and don't always feel like cooking for themselves, this is a treat some might like. It is quick and easy and most people would hopefully have them in the pantry or fridge. Lighten up bohanka enjoy the little things.
