Our Mini Liquor Cheesecakes is the cheat’s way to make a tasty ‘homemade’ dessert in just 10 minutes. You only need five ingredients, and there’s no baking or any lengthy chill time.

Serves: Six

Time: 10 minutes

Ingredients

  • 6 Arnott’s Butternut Snap Cookies
  • 1/3 cup Baileys’ Irish Cream liquor
  • 200g ricotta
  • 250g Philadelphia cream cheese
  • 60g icing sugar


Method

Line a muffin tin with six muffin papers. Place the biscuits upside down in the base of each muffin cup. Drizzle one teaspoon of Baileys over each biscuit. In a food processor, pour the remaining Baileys’ and add ricotta, cream cheese and icing sugar, and process until smooth.

Divide the mixture between muffin cups and chill until serving.

Serving suggestion: top with strawberries for a decadent touch

    looks like they've forgotten to mention the brown ingredient n the top - perhaps chocolate or caramel - any other suggestions
