No-Fuss Custard Cake

With minimum ingredients, this simple No-Fuss Custard Cake is moist and delicious – perfect with a cuppa and to share with friends. Serve with icing or not, it is good enough to stand on its own.

Time: 1.5 hours 

Ingredients

  • 2 cups self-raising flour
  • 250g butter, room temperature
  • 2 teaspoons vanilla essence
  • 2 cups caster sugar
  • 4 eggs
  • 3/4 cup custard powder
  • 1 cup milk

Method
Preheat oven to 180ºC (160ºC, fan forced). In a large mixing bowl, combine all ingredients. Using an electric mixer, mix until just combined. Pour cake batter into a 23cm square or round cake pan. Cook for 1 hour. Check cake with a wooden skewer, as cake may take an additional 5–10 minutes to finish cooking through the middle.
