This one-pan bolognese bake uses so few dishes, you won’t even notice you’ve done the washing up until it’s finished.
1 tablespoon olive oil
2 & 1/2 cups cold water
1 small brown onion, chopped
1 small zucchini, diced
150g lean beef mince
2 garlic cloves, crushed
200ml tomato based pasta sauce
1 & 1/4 cups dried mini penne pasta
1 teaspoon dried oregano
3/4 cup grated mozzarella cheese
Preheat the grill to medium.
Heat oil in a frying pan with a flameproof handle. Add the zucchini and onion, and cook until soft. Next, add the mince and the garlic and stir until browned.
Stir in the dry pasta, oregano and water.
Bring the mixture to the boil then reduce the heat to medium.
Cook until pasta is tender and sauce has thickened, then season with salt and pepper. Sprinkle pasta mixture with cheese and grill until cheese has melted.
Serve hot and enjoy the limited washing up.
