Orange Cake

If you’re looking for a quick and easy treat to serve for afternoon tea, this Orange Cake is perfect to enjoy with a cup of tea.

  • 2 oranges
  • 200g unsalted butter, softened
  • 4 eggs
  • 1 1/2 cups raw sugar
  • 1 cup self-raising flour, sifted
  • 1/2 cup almond meal

  • 50g unsalted butter, softened
  • 2/3 cup icing sugar
  • 3 tablespoons orange juice

Preheat the oven to 180°C and grease and line a 20cm round baking tin.

Cut oranges (skin and all) into bite sized pieces, place in a blender and blend until pureed.

Beat the eggs, better and raw sugar in a separate bowl until pale and thick. Add the puree and combine. Fold in the sifted flour and almond meal. Pour into the prepared cake tin.

Bake for 50-55 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin.

To make the icing beat the butter until pale and creamy. Add the icing sugar and beat for two minutes. Add the fresh orange juice and beat until just combined.

Smooth the icing over the top of the cake once it is completely cooled.
