Beautiful flavours abound in this tasty salad.
This wonderful combination of bitter radicchio, sweet crisp pears and creamy blue cheese is a winner.
- 1/2 red radicchio
- 1 pear
- 50 g soft blue cheese
- 1 tablespoon walnuts
- 1⁄4 cup flat-leaf parsley
- 1/2 tablespoon olive oil
- 1/2 tablespoon red wine vinegar
- 1/2 teaspoon Dijon mustard
- 1/2 tablespoon honey
Shred the radicchio, cut the pears in half and slice. Whisk the olive oil, red wine vinegar, Dijon mustard and honey together in a bowl. Toss the radicchio and pears in the dressing, crumble the blue cheese over the top and scatter with walnuts and parsley.
