Poached Pears are a healthy and light option for dessert and a dinner party favourite. For a stress free preparation, poach the pears a day before and served them chilled. Bellissimo!
Time: 40 minutes
- 1 1/2 cups cranberry juice
- 1 1/2 cups apple juice
- 5 tablespoons sugar
- 1 vanilla pod cut in half
- 1/4 teaspoon mixed spice
- 1 orange, zested
- 4 firm pears, peeled
Place juices into a deep saucepan with sugar, vanilla, mixed spices and orange zest. Heat until the sugar is dissolved. Add pears to pan, making sure they’re covered with liquid. Bring to the boil and simmer for 25 minutes or until pears are tender. Remove pears to a warm dish. Discard liquid but keep 2 cups aside. Return 2 cups of liquid to saucepan. Bring to the boil. Boil rapidly for 10 minutes or until syrup is reduced by half. Serve pears warm with syrup poured over.
