Poppy seed biscuits

These yummy poppy seed treats take only minutes to prepare.

Ingredients

  • 4 tablespoons grapeseed oil
  • 3 tablespoons white sugar
  • 2 tablespoons vanilla powder
  • 2 tablespoons lemon zest
  • 2 cups almond meal
  • Pinch of salt
  • 2 tablespoons poppy seeds
  • 1 egg white

 

Method 

Preheat the oven to 180ºC. Line a tray with baking paper.

Combine the oil, sugar, vanilla powder and lemon zest. Add in the almond meal, salt and poppy seeds and knead for five minutes.

Roll the dough out to a 1.5cm thickness. Using a cookie cutter or small glass, cut into shapes.

Place on the baking tray and brush with the egg white. Bake for six to eight minutes or until the biscuits start turning golden on the edges.

    What is the 'vanilla powder' used in this recipe? I checked it on Google, and it is extremely expensive, and according to what I read, you use a very small amount. Recipes I saw on the supplier web page used 1/2 a teaspoon, but this recipe calls for 2 Tablespoons.

    I just use the old vanilla in the bottle -
    yes it is mixed with alcohol -
    but a few drops should not matter -
    it's not like you drank a shot of vodka or two.
    vanilla powder can be mixed with other things additives
    who knows ?

    I love oat / Anzac type biscuits
    Butternut snaps type stuff
    I got a recipe for oat biscuits with olive oil instead of butter
    I only made them once & used light olive oil, which gave them a nice flavor
    They taste delicious
    It was not the Anzac recipe, it was different & I must have got the recipe a bit wrong .../?
    The ingredients kind of did not stick together properly/completely & they were very crumbly
    So I left them in the oven a bit longer & they were harder
    But they were nice anyway
    Maybe I did not add enough oil .../?

    Beware that you don't eat a lot of these if you are going to drive where there might be a police breath testing unit. The poppy seeds will give you a positive breath test for drugs.
