Potato Salad with a twist

With the tang of preserved lemon, our Potato Salad is a delicious side to any backyard BBQ.

A little bit unconventional, our Potato Salad is made delicious with the tang of preserved lemon. It’s vegetarian, and makes a satisfying side to any backyard barbecue.

Serve: Four

Time: 40 minutes

Ingredients

  • 500g kipfler potatoes, scrubbed
  • 4 tablespoons whole egg mayonnaise
  • 1/4 preserved lemon, finely sliced
  • 2 hard boiled eggs, cooled, peeled and chopped
  • 1 bunch chives, finely chopped
  • smoked paprika, to sprinkle


Method

In a saucepan, bring the scrubbed potatoes to boil and then simmer for half an hour until tender. In a bowl, mix the mayonnaise with the preserved lemon. Once the potatoes are cooked, allow them to cool and then slice them and toss into the mayonnaise. Arrange on a plate and scatter with eggs and chives. Season to taste and sprinkle with smoked paprika.

    How do you make the whole egg mayonnaise?

    AutumnOz - you buy it at the supermarket. Some brands make whole egg mayonnaise. What I want to know is what is "preserved lemon". Do they mean crystallized lemon or mixed peel which also has orange in it? It seems like a strange ingredient but then some of the recipes on this site are not accurate.

    Thanks Hardworker, I won't be able to use the bought mayonnaise as they all have some sort of preservative in them which doesn't agree with me....allergies are at pest.

    I've never heard of kipfer potatoes or preserved lemon but they could be American items we know by another name. You should be able to use fresh lemon especially if it comes from your garden.

    To preserve lemons you cut them in half & place in wide jars with extra juice & lots & lots of rock salt. Leave for a couple of weeks & use the rinds.

    Kipfler potatoes are available in fruit shops and the supermarkets these days and are very nice. They are small slim brown potatoes.
    There are so many really nice and easy potato salad recipes out there I will be giving this one a miss as it is too much trouble. Maybe fine if you grow your own lemons.

    Yep, most of us have preserved lemons in our pantries - not!
    AutumnOz - there are a number of really good whole egg mayonnaise recipes on the net. Easy to make, just takes a tad of patience. If you can't find one, let me know & I'll get a couple for you.

    Very high in fat, I make vegan potato salad with lots of salad ingredients to lighten it up and my dressing is small amounts of avocado, tahini and lemon juice.
