This Pumpkin and Blue Cheese Pizza will wow your lunch companion, but it doesn’t take much effort and won’t cost a fortune.


  • 1 pizza base
  • 250 g pumpkin, cut into 1.5cm thick slices
  • 1/2 teaspoon each chilli flakes and cumin seeds
  • 30 ml olive oil
  • 30 ml maple syrup
  • 50 g grated mozzarella
  • 50 g mild blue cheese, crumbled
  • 50 g rocket leaves
  • 1/2 tablespoons balsamic vinegar 

Lightly grease a baking tray and preheat the oven to 200°C. Spread the pumpkin on the baking tray and rub with the spices and oil. Pour over maple syrup and season with salt and pepper. Cook in oven for 20 minutes, then turn and cook for another 10 minutes.

Meanwhile, on another baking tray, scatter the pizza base with mozzarella and cook with the pumpkin for the last six to eight minutes of cooking time. Remove from the oven. Scatter pumpkin slices and blue cheese over the bases (reserving pan juices). Cook for a further 2-3 minutes. Scatter with rocket.

To serve, combine the balsamic vinegar with the pumpkin roasting juices and then drizzle over the pizza. Enjoy with a good friend over a glass of chilled white wine.
