Ricotta Frittata

Font Size:

Nutritious and delicious with a decent boost of calcium and protein, our Ricotta Frittata is light yet satisfying. Serve it with some crusty sourdough and a side salad for a complete meal.

Serves: Four

Time: 40 minutes

  • 1/2 cup cream
  • 6 eggs
  • 25g butter
  • 3 spring onions, chopped
  • 1 cup ricotta cheese
  • 1/2 cup basil leaves, torn

In a bowl, add the eggs and cream, and season with salt and pepper. Whisk until well combined. In a frypan, melt the butter over a low heat. Add the egg mixture, but do not stir. Cook for five minutes, then top with ricotta and cook for a further 15 minutes. Next, place the frypan under a hot grill and cook until the egg sets and the top is golden, about five minutes. Sprinkle with spring onions and basil leaves before serving. Serve with a side salad and some crusty sourdough bread.

Surely that’s pastry and what’s with all the zucchini slices on the top?

I’ll give the editor some credit, it’s close the photo, real close, at least it’s not a trifle.

    sack the photographer
    sack the food journalist
    sack the chef
none of the above have a clue on what they are describing, photographing or cooking

Why do they keep on getting it wrong? Surely it’s not hard to find a photo which vaguely resembles the recipe!

Agree with the above comments – but the pictured food does look nice – it would be great to have the recipe! 🙂

I agree with all the above comments but what gets me is there is never a response to comments made about wrong pictures or descriptions . Just proves to me the comments are not read by the editors of this site .
