Sausage Hotpot with Baked Potatoes

This hearty sausage hotpot with cannellini beans is the perfect comfort food for a cold night. Tender sausages are cooked with aromatic vegetables and creamy cannellini beans, all simmered together in a rich tomato sauce. This one-pot wonder is easy to make and is sure to become a family favourite. If you want to serve it alongside a tasty baked potato, the microwave method will give you the perfect baked potato in minimal time.

Serves: 2
Ingredients:

  • 1 tablespoon vegetable oil
  • 2 pork or beef sausages, each cut into four even pieces
  • 1/2 celery stalk
  • 1 small carrot, diced
  • 1 small white onion, diced
  • 2 tablespoons tomato paste (concentrated purée)
  • 1 tablespoon Worcestershire sauce
  • half a tin of cannellini (lima) beans or butterbeans, drained

Baked potatoes: (optional)

  • 2 medium-large potatoes
  • butter, to serve
  • 50g cheddar, grated

Method

Begin by preheating your oven to 220°C.

Next, heat up the oil in a large saucepan over high heat. Add in the sausages and brown them all over before removing them from the pan. Lower the heat to medium and add in the vegetables. Cook them for three or four minutes until they are softened. Stir in the tomato paste and cook for an additional three minutes.

Add the sausage pieces, 100ml of water, Worcestershire sauce, and beans to the pan and bring everything to a boil. Once it’s boiling, reduce the heat to a simmer and cook for about 15 minutes until the sausages are cooked through and the sauce is thick.

While the hotpot is simmering, prepare your potatoes. Prick them all over with a fork and then pop them in the microwave. Cook them on high for eight minutes. After that, transfer them to the oven and cook for another eight minutes. Alternatively, you can cook fully them in the oven for 35-45 minutes.

To serve, cut open the baked potatoes and spoon the hotpot over them. Finish off by sprinkling some cheddar on top. Enjoy!
