A deliciously rich treat, this Self-Saucing Chocolate Fudge Pudding should be enjoyed just occasionally. Lucky this weekend is the perfect occasion, isn’t it?

(serves 3)
1 cup self-raising flour
2 tablespoons cocoa
3/4 cup brown sugar
3/4 cup milk
2 tablespoons melted butter
3 drops vanilla essence

2 tablespoons cocoa
1 3/4 cups boiling water

Preheat oven to 180°C (160°C fan forced). Sift flour and cocoa for pudding into an ovenproof dish, then add sugar for pudding. Add milk, butter and vanilla essence and stir together to form the pudding base. In a separate bowl, mix all sauce ingredients. Pour sauce gently over the back of a spoon and onto the pudding. Bake for one hour, and serve hot with ice-cream or cream.
