Have a healthy and but tasty barbecue dinner.
Now that the weather is warming up, dust off the barbecue for dinner with an Asian flavour. These delicious chicken shashliks are perfectly accompanied by a wholesome fried rice
- 200g chicken breast or thighs, diced
- 1 tablespoon Hoisin sauce
- 1 tablespoon grated ginger
- 1 teaspoon olive oil
- 1 tablespoon olive oil
- 1/2 teaspoon chilli powder
- 1 clove garlic, crushed
- 1/2 cup rice, cooked and refrigerated until cold
- 1 carrot, diced
- 1/2 cup corn kernels
- 1/2 cup frozen peas
- 1 cup broccoli florets
- 1/2 bunch buk choy, chopped
- 2 spring onions, sliced
- 1 tablespoon soy sauce
Mix the Hoisin sauce, ginger, diced chicken and olive oil together and marinade for one hour. Thread the chicken onto skewers and cook on the barbecue until cooked through.
Meanwhile, in a wok heat the oil. Add the rice and cook for three minutes. Stir through the garlic and chilli powder. Add in the carrot, corn, broccoli and buk choy and story fry for two minutes. Stir in the spring onions and peas and cook for a further two minutes. Pour over soy sauce.
