Simple Chocolate Soufflé

Soufflé is infamously difficult to make, so why not impress your friends with this decadent dessert using our Simple Chocolate Soufflé recipe?

Ingredients (makes four)

  • 4 tablespoons butter
  • 4 tablespoons cocoa
  • 170 grams dark chocolate
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 4 tablespoons sugar
  • Pinch of cream of tartar

Preheat your oven to 190°C (170°C fan forced). Grease four 300ml ramekins with a little butter. Put one tablespoon of cocoa in each ramekin and coat the insides, tapping out the excess.

Melt the chocolate and butter together in a double boiler, stirring occasionally until smooth. Remove from the heat and take the top half of the double boiler away from the boiling water. Add the vanilla. Separate the egg yolks from the whites, but keep both halves. Add the egg yolks one at a time to the chocolate and butter mixture, whisking until smooth.

Place the egg whites, sugar, salt and cream of tartar in a bowl. Whisk together until the egg whites are stiff but not dry. Fold the egg white mixture into the chocolate mixture and spoon it evenly into the four ramekins.

Bake for 20 minutes until puffed up and set. Serve warm with cream, ice-cream or custard.
