This quick and easy shredded chicken salad is a healthy option for any meal.

- 200g cooked chicken, shredded into strands
- 2 medium carrots
- 2 zucchinis
- Small bunch broccolini
- 1/2 cup bean shoots
- 3 green shallots
- 1/2 bunch coriander
- 1/2 cup sesame seeds
- 1/4 cup soy sauce
- 3 tablespoons sesame oil
- 1 tablespoon lime juice
- 1 small red chilli
- Small piece ginger, grated
Cut the broccolini, including stalks, into small chunks. Steam until cooked.
Prepare the chicken by finely slicing cooked flesh into long shreds before placing in large mixing bowl Grate the two carrots and zucchinis into the mixing bowl with the chicken. Chop the green stems of the shallots and add along with the cooked broccolini, bean shoots, coriander leaves and sesame seeds to the mixing bowl. Mix salad through thoroughly before placing in a serving bowl.
Remove seeds from the chilli and chop finely.
To make dressing place all ingredients into a screw top jar and shake well. Pour dressing over salad just before serving and mix well to combine.
