Simple Strawberry Fudge

Who can say no to fudge? Our Simple Strawberry Fudge is a heavenly treat that’s hard to beat. But beware, it’s super sweet – if you can eat only one piece at a time, you’ll be doing better than most!

Serves: 16 pieces

Time: 30 minutes

Ingredients

  • 250g white chocolate buttons
  • 1/2 cup butter, at room temperature

  • 4 cups powdered sugar, plus extra, as needed
  • 1/4 cup whole milk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2–3 tablespoons strawberry fruit spread or jam


Method

Using an electric hand mixer, beat the butter in a metal bowl until it’s light and smooth. Beat in three cups of powdered sugar, milk and vanilla until smooth and creamy.

Add the strawberry fruit spread or jam to frosting and beat. Mix in the rest of the sugar and beat until smooth and creamy. Add more sugar if needed.

In another metal bowl, add the white chocolate and then place over a saucepan of simmering water until melted. Remove from heat, add strawberry frosting and stir well to combine.

Pour into a lined square cake tin and smooth down. Refrigerate for at least 20 minutes until set. Cut into bars and serve.
