Simple Succulent Greek Souvlaki

Souvlaki is a popular street food in Greece and perhaps the country’s most-loved dish. Well-seasoned meat garnished with cooling tzatziki sauce, all wrapped up in a delicious pita – what more could you want?

This tasty souvlaki is not only simple to make, it’s healthy too!

Serves: 2

Ingredients

  • 400g lean lamb (beef will also do nicely)
  • bunch of bay leaves, preferably fresh

Marinade

  • 3 tablespoons olive oil
  • 1/2 lemon, juiced
  • 2 teaspoons dried or fresh thyme
  • 1 large garlic clove, crushed,
  • black pepper

To serve (optional):

  • pita wraps
  • tzatziki dip
  • 1 tomato, sliced
  • 1/2 red onion, sliced into rings
  • 1/2 lemon, cut into wedges

 

Method
Dice the lamb (or beef) into 2.5cm pieces.

To make the marinade, mix the olive oil, lemon juice, thyme, garlic and pepper in a medium-sized bowl. Place the meat in the bowl with the marinade and mix until well coated. Leave in the refrigerator or overnight, or at least for two hours.

Preheat the grill and the oven to 120°C or the lowest setting. Thread the meat on to four skewers, with the bay leaves. Grill the kebabs with the marinade, and finish cooking in the oven for 20–25 minutes.

Serve wrapped in pita bread along with tzatziki, sliced tomato, red onion and a squeeze of lemon.
