Single-serve Banana Bread

Our Banana Bread is perfect for a single serving, and there is no need to feel guilty about indulging in this dessert, as it’s one of our more healthy ones.

Serves: One

Time: 20 minutes 


Dry ingredients

  • 3 tablespoons white flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 tablespoon sugar


Wet ingredients

  • 1 tablespoon mashed banana
  • 1 tablespoon applesauce
  • 1 tablespoon milk
  • 1/4 teaspoon pure vanilla extract



Preheat the oven to 160°C. Mix the dry ingredients together in a bowl and then in a separate bowl mix the wet ingredients. Next, combine the wet with the dry and pour into an oiled muffin pan. Bake for 15 minutes. Cool before enjoying.

    Many yummy Banana bread/cakes recipies around, the apple sauce is a new one on me.
    When I have needed apple sauce in a one off recipie (not normally using it) I buy a tin of baby
    apple, it is perfect!

    Apple sauce is a well known fat substitute in many baked goods recipes, Dizzy. Doesn't work in everything though.

    Polenta and rice or coconut flour makes a good GF alternative to "white" flour. Also there's an excellent flour made solely from green bananas. It's made in Atherton - Mount Uncle's Green Banana Flour" - not cheap but you need less of it. I can vouch for it. Doesn't particularly taste of bananas either!
