Spicy Pumpkin Soup

Jazz up pumpkin soup and add a bit of a bite.

Spicy Pumpkin Soup

Pumpkin soup is a perennial favourite but it can become a little boring. This spicy version will help jazz up meal times.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 1 teaspoon red curry paste
  • 1 litre chicken stock
  • 1 butternut pumpkin, peeled and diced
  • 1/2 cup cream cheese
  • 1/4 cup fresh coriander, chopped


Method

Heat the oil in a large pan and cook the onion until soft. Stir in the curry paste, stock and pumpkin. Simmer until the pumpkin is tender.

Remove from the pan and blend until smooth. Return to the pan and stir in the cream cheese and coriander before serving.

    I like a sweet pumpkin soup. I use the Kent(Jap) Pumpkin and look for one that is very ripe where a lot of the skin is creamy and pale and when opened is a really dark orange colour.
    I then use Spanish (Red) Onions (2), 1 stick of celery, 1 carrott and my own vegetable stock (not chicken stock avoid the MSG etc). Cook for around an hour and then blend. Very simple, very sweet and delicious. When blended and ready to serve (to visitors) I sprinkle and add some finely chopped fresh parsley from the garden and a dessert spoonful of fresh cream and swirl it. It looks professional and tastes great. If I'm serving it for myself, I don't bother putting the parsley/cream into it.

    I also like a mild curry flavour in the pumpkin soup I make. I add a rounded teaspoon of a blended curry powder especially formulated for vegetable dishes, which I buy from a spices shop in the city where I live. A good dessertspoonful of brown sugar takes the sharp edges from the curry, and I also like to add a good amount of mashing potato to the pumpkin and onion for extra body. Absolutely delicious! I will try Andrea's version though - it sounds good. And I always add the cream, or alternatively evaporated milk.
