A tasty no-fail spicy baked fish to share with friends or alone.
Debbie’s auntie Helen spends a good portion of the year in Spain living as a local would. She relies on this no-fail spicy baked fish recipe when having friends for dinner and it’s become a firm fiesta favourite.
4 inexpensive white fish fillets
1 green capsicum, chopped
1 medium onion, chopped
1 clove of garlic, crushed
1 small tin chopped tomatoes
2 fresh chillies, deseeded and chopped
2 bay leaves
100ml dry white wine
Juice of 1/2 lemon
Salt and freshly ground black pepper to taste (you can also add a little paprika if you like your food with a kick)
4 large squares of baking parchment
Preheat oven to 180'C and lightly brush each parchment square with olive oil.
Place a piece of fish on each paper square.
In a bowl, mix together the onion, capsicum, chili, tomatoes and garlic and divide between the four parcels.
On top of each parcel, place 1/2 bay leaf, some white wine and lemon juice and season to taste.
Scrunch together the edges of the parchment paper to make loose parcels, but ensure no steam can escape.
Place in the oven and bake for 25-30 minutes, until the fish easily flakes.
Serve with rice or new potatoes and green beans.
