Sticky Date Muffins

Our Low-Sugar Sticky Date Muffins are a healthier way to enjoy the gooey sweetness of an old favourite. Warm up in the microwave for a truly wonderful winter treat.

  • butter
  • 150ml water
  • 12 dates
  • 1 1/2 ripe bananas, peeled and roughly chopped
  • 3 tablespoons flour
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 1 teaspoon honey
  • 1/2 teaspoon baking powder


  • 5-6 dates, chopped
  • juice of half an orange
  • 3 tablespoons water
  • 1 teaspoon vanilla extract or essence
  • 1 teaspoon honey



Preheat oven to 185°C. Grease muffin tins with the butter.

Slowly heat dates and water in a small saucepan and boil until dates are soft. Mash them with a fork and set aside.

Place the flour, eggs, banana, vanilla extract and baking powder into a blender or food processor, mixing well to aerate. Add dates to the banana mixture and combine. Evenly distribute into the muffin moulds. Bake for about 20-22 minutes.

To make the topping, add all ingredients to a small saucepan and cook over low heat for about 3-4 minutes, or until the dates break down. Mash with a fork to make a smooth paste. Set aside.

Allow the muffins to rest for five minutes before placing them on a wire rack to cool. Spoon sticky date topping onto the tops of each muffin and serve.
