Superfood Stir-fry

This Superfood Stir-fry is packed full of ingredients, which not only taste delicious, but are also thought to keep your body and your brain healthy.

Ingredients (serves two)

  • 250g peeled green prawns
  • 1 tablespoon peanut oil
  • 1/2 red onion
  • 1 garlic clove
  • 1 red chilli
  • 1/2 small bunch kale
  • 75g sugar snap peas
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 2 serves steamed jasmine rice

Method
Wash the kale before trimming and shredding so it is in manageable pieces. Top and tail the sugar snap peas. Heat half the peanut oil in a wok over high heat. Add the prawns and cook until they’ve turned white and red, approximately three minutes each side. Remove the cooked prawns and set aside on a plate.

Cut the red onion into thin wedges and thinly slice the red chilli. Set aside a small portion of the chilli for garnishing later.

Heat the remaining peanut oil in the wok over high heat and add onion. Stir-fry for one minute then crush the garlic clove and add to the onion, along with the chopped chilli.

Stir-fry for a further 30 seconds before adding the kale, sugar snap peas and 1/3 cup of water. Stir-fry for approximately five minutes or until the kale wilts. Add the prawns back into the wok along with the sesame oil and soy sauce. Mix well for two minutes or until the prawns are heated again.

Serve the stir-fry on a bed of rice and garnish with the extra slices of chilli.
