Traditional Green Bean Casserole

Green Bean Casserole is a traditional dish you can expect to see on the Christmas or Thanksgiving dinner table in the United States. And with winter fast approaching down here in Oz, it makes for a great comforting meal.

Serves: Four to six
Time: One hour 15 minutes

Ingredients

Topping:

  • 2 medium onions, thinly sliced
  • 1/4 cup plain flour
  • 2 tablespoons panko breadcrumbs
  • 1 teaspoon sea salt
  • Non-stick cooking spray


Beans and sauce:

  • 2 tablespoons plus another 1 tablespoon sea salt, divided
  • 500 grams fresh green beans, rinsed, trimmed and halved
  • 2 tablespoons unsalted butter
  • 350g mushrooms, trimmed and chopped into 2cm pieces
  • 3 cloves garlic, minced
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons plain flour
  • 1 cup chicken broth
  • 1 cup thickened cooking cream
  • Freshly ground black pepper


Method

Preheat the oven to 250 degrees Celsius.

In a large mixing bowl, toss together the onions, flour, panko and salt.

Lightly spray a baking tray with non-stick cooking spray and spread onion mixture evenly across the pan.

Cook in the oven on the middle rack for about 30 minutes until golden brown, tossing two to three times while cooking. Remove from oven and set aside.

Reduce oven temperature to 200 degrees Celsius.

While onions are cooking, bring four litres of water and two tablespoons of salt to boil in a seven-litre stockpot. Blanch beans for five minutes. Drain beans in a colander and submerge in cold water to stop them cooking. Drain and set aside.

Melt butter in a 34cm cast iron frypan over medium-high heat. Add in the mushrooms and one-teaspoon of salt and pepper. Cook for approximately four to five minutes until mushrooms begin to sweat. Add in the garlic and nutmeg, continuing to cook for another one to two minutes. Sprinkle over with flour and stir through, cooking for another minute. Pour in the broth and simmer for one minute. Turn heat down to medium-low and add in the cream. Cook for another six to eight minutes, allowing mixture to thicken. Stir occasionally.

Remove pan from the heat and stir through 1/4 of the onions and all of the green beans. Sprinkle remaining onions over the top and bake in the oven for approximately 15 minutes until bubbling.

Serve immediately.
