A tasty side dish that can be served as an accompaniment to fish, chicken or steak. Takes no time at all to cook.
- 2 tablespoons sesame seeds
- 2 cloves garlic, crushed
- 2 tablespoons olive oil
- 6 zucchini, sliced
- 6 spring onions, chopped
- 2 tomatoes, cut into wedges
- 1/3 cup fresh basil, chopped
Saute the garlic in the olive oil until golden. Add the zucchini and spring onions and cook for five minutes. Stir in the tomato and basil and cook until heated through. Sprinkle with sesame seeds and serve.
