Whole Roasted Trout

For many, Friday night is fish’n’chips night. Why not go for a healthier take with our Roast Trout? Serve it with some homemade, oven-baked chips for a delightful dinner.

Serves: Two

Time 20 minutes

Ingredients

  • 2 lemons, thickly sliced
  • 2 whole freshwater trout
  • olive oil
  • 1 small bunch sage, leaves picked
  • handful flaked almonds


Method

Preheat your oven to its highest setting and then line a baking tray with foil. Place the lemon on top of the foil in two lines and lay the trout on top. Drizzle with olive oil and season with salt and pepper. Place the tray in the oven and cook for five minutes, now place the sage and almonds over the trout and return the trout to the oven and bake for another five minutes. Serve the fish with a side of green salad or vegetables, and some oven-baked chips.

Serving suggestion: you can also try the trout with lemon and thyme for a tasty alternative.
