Wondering what to serve for lunch?
Use up those spare zucchinis in your vegetable crisper and you will have a tasty light meal to serve with a salad for lunch.
- 1 teaspoon olive oil
- 1 onion, diced
- 1 large or 2 small zucchini, grated
- 75 g baby spinach
- 3 eggs
- 1/3 cup self-raising flour
- 1/8 cup vegetable oil
- 100 g fetta cheese, crumbled
- 1/2 cup cheddar cheese, grated
Preheat the oven to 180°C. Line a slice dish with baking paper.
Heat the oil in a frying pan and cook the onion for two minutes. Add the zucchini and cook until softened. Stir through the spinach leaves until wilted. Set aside.
Whisk together the eggs, flour and vegetable oil. Stir in the onion mixture and cheeses. Pour into the prepared dish.
Bake for 20-30 minutes until set.
