Part biscuit, part cake, part pie, Whoopie Pies are the latest baking craze. This chocolatey recipe is delicious, but Whoopie Pie is not exactly a health food so be sure to enjoy in moderation.
Ingredients (Makes eight)
1/2 cup self raising flour
1/4 cup cocoa
3/4 teaspoon bicarbonate soda
60g unsalted butter, softened
1/4 firmly packed cup brown sugar
1 egg, at room temperature
1/2 teaspoon vanilla extract
1/4 cup buttermilk
50g white marshmallows
Preheat the oven to 180°C. Line two trays with baking paper. Sift the dry ingredients together. In a separate bowl beat the butter and sugar together until fluffy, and then beat in the egg, the vanilla and the buttermilk. Reduce speed to low, add dry ingredients and beat until mixture is smooth.
Spoon the mixture onto the trays as if you were making biscuits. Each biscuit or cake should be one tablespoon of mixture. Ensure each one is at least four cm apart from the next. Bake for eight minutes until they have doubled in size and are firm on top.
While the cakes are cooling place marshmallows in a bowl with a teaspoon of warm water. Microwave on high for 20 seconds, then stir until smooth. Spread the marshmallow over half the cakes, then sandwich together with the remaining ones. Enjoy in moderation.
