Charred Corn and Potato Salad

My business partner, Ben Foster, is a damn good cook. Don’t tell him I said that, but he really is – although he’s a bit messy in the kitchen, like all ‘home chef wannabes’. This is one of his staple early autumn salads that I have enjoyed many a time at his house.

This no-fuss salad mixes charred corn with potatoes in a creamy, slightly spicy dressing for a unique and flavourful recipe.

Serves: 2–4


  • 1kg potatoes, peeled and roughly diced (pink fir apple, kipfler or small nicola)
  • 2 corn cobs, husks removed
  • 125g mayonnaise
  • 1/4 teaspoon chilli powder
  • 1 tablespoon pickled jalapeño chillies, chopped (optional)
  • 3 spring onions, chopped
  • 1 small handful coriander, leaves picked, washed and chopped
  • 1 lime, juiced



Place the potato in a pot and cover with water. Bring to the boil and cook for 5–7 minutes, or until tender. Drain and set aside.

Meanwhile, preheat a chargrill or barbecue to high. Toast the corn cobs until nicely browned, about 15–20 minutes. Cool a little, then slice off the kernels.

In a mixing bowl, stir together the mayonnaise, chilli powder and jalapeño chilli.

Add the potato and corn, then the rest of the ingredients. Season and serve.

This is the perfect barbecue salad or lunch. A good sprinkling of fried bacon or chorizo doesn’t go astray, and adds a lovely texture.
