Did you know that, in days past, Jam Roly Poly was steamed and served in an old shirt sleeve? Our version is a lot less ‘traditional’, but still super tasty.
1 cup of butter, plus 2 extra tablespoons
2 cups self-raising flour
2 tablespoon cold water
1 jar of apricot jam
1/2 cup sugar
2 cups boiling water
Use your fingers to rub the butter into the flour. Add water to mix into a dough. Use a rolling pin to roll out and spread with apricot jam.
Roll up, sealing the edges.
Place in a large baking dish.
Cut the top of the dish diagonally three times.
Refrigerate for 1 hour.
Preheat oven to 180’C.
Meanwhile, dissolve the sugar and 2 tablespoons of butter in boiling water.
Pour this syrup over the dish and bake for 40 minutes
For maximum enjoyment serve with cream or ice- cream!
Depending on taste or preference, strawberry, blueberry or any other jam can be used as an ingredient.
