The Saint David Dairy is the realisation of a life-long dream of Managing Director Ben Evans. A food technologist from a 4th generation dairy farming family, Ben has dedicated his working life to the dairy industry with a vast range of specialised experience and passion for all things milk.
The Saint David Dairy produces milk which is as close to its natural state as possible, while still being pasteurised to legal food safety standards. They don’t produce any frothing, barista or cafe blends which, as they say, are “code for adding cheaper ingredients and by-products to give white liquid that froths”.
All the milk is sourced a maximum of one hour from Fitzroy, which minimises its food miles. As a micro-dairy, the Saint David Dairy does not have the economies of scale of the larger multinationals, so the milk does cost more than $1 per litre. They do, however, do all the work themselves, from processing to packaging and distributing, just like any other small business, which helps to keep the costs down.
You can get full cream, reduced fat or non-homogenised full cream milk, as well as pouring cream and pure double cream. As the website explains, “Our creams are the way cream should and used to be, before the consumer-driven yet profit boosting farce of replacing fat with thickeners took over. We buck this trend and produce pure cream, with no additives. It is great for cooking as it resists splitting, and also straight from the bottle.”
