Simple Savoury Pancakes

Dosas originate from Southern India, but that doesn’t mean they’re difficult to make. These Simple Savoury Pancakes are delicious and offer something different for dinner.

Time: 30 minutes, plus resting

Method
In a small bowl, mix together yoghurt, mint and lemon. Set aside. In a large mixing bowl, mix together the flours and spices. Whisk in water, gradually. Mix in egg and oil, making a smooth batter. Rest batter for 15 minutes. Using a large, non-stick frying pan, heat oil over medium heat. Pour 1/2 cup of batter into the prepared pan, cooking 1-2 minutes on each side. You will have about six batches worth of batter. Slide dosa onto a plate. To cook the filling, heat oil on high using a large frying pan. Saute onion, sweet potato, zucchini and garlic for 4-5 minutes. Stir in the curry paste, cook for 1 minute. Add in crumbled paneer, stir through. Place filling onto pancake and roll up. Repeat with the rest of the dosas. Serve with yoghurt dipping sauce and lemon wedges.
