With sliced beef and a few simple ingredients you can make a satisfying and healthy meal that’s not-so-heavy on the hip pocket.
Time: 15 minutes
- 450g blade or porterhouse steak, to slice
- 2 medium tomatoes, cut into wedges
- 4 handfuls baby spinach
- 100g feta
- 1/2 avocado, sliced
- 1/2 lemon
In a frying pan heat some olive oil and cook the beef on a medium heat until browned. Slice steak into 5mm slices. Divide the spinach into two bowls and add the beef. Top with tomatoes and sliced avocado. Season with salt and pepper. Drizzle with lemon juice and olive oil and serve.
