Bacon and Apple Turkey Stuffing

4 rashers of bacon (fat removed), finely chopped
1 cup peeled and finely chopped onion
2 Granny Smith apples, peeled, quartered, cored and finely chopped
1 teaspoon finely chopped sage
1 beaten egg
1/2 fruit mince
2 tablespoons finely chopped flatleaf parsley,
2 cups breadcrumbs (try multigrain bread for extra texture)?
Salt and pepper to taste
1/2 cup chicken stock

Saute onion in half butter until soft, then add finely chopped bacon and thyme and cook for two minutes. Remove from pan, hold aside and sauté apples in balance of butter until soft. Add back onion and bacon mixture, stir through, then add parsley, fruit mince, breadcrumbs and seasoning. Bind with beaten egg and Add a little chicken stock if too dry.
This stuffing can be used in a family-sized turkey which serves 6-8 or cooked separately in foil.
