Beef and Pork Meatballs

Meatballs are a firm family favourite as these tasty little morsels can be served with just about anything and don’t cost a lot to make yourself.

Serves four

250g each of pork and beef mince (the leaner the better)
1/2 small red onion, finely chopped
1 clove garlic, finely chopped
1 tablepoon fresh thyme, chopped
1 dash of Worcestershire sauce
Pinch of ground paprika
1 large egg
Spray olive oil
Salt and fresh ground black pepper to taste

Combine the mince, onion, garlic, thyme, Worcestershire sauce and paprika in a large bowl. Beat the egg and add to mixture, using your hands to pull together. Season to taste. Form into small, bite-size balls.

Preheat a frying pan over a medium heat. Spray the pan with olive oli and gently fry the meatballs. You can do this in batches if you prefer.

Allow to rest for a few minutes, covered to keep in the heat.

Serve with potato and steamed vegetables, or a rich tomato sauce and pasta.
