Jambalaya

One pot dishes are great for making entertaining easy and this Soul Food Jambalaya will bring a touch of spice to any gathering.

Ingredients

225g smoked sausage, sliced
225g chicken, pieces
225g prawns, peeled and deveined*
1 tablespoon vegetable oil
11/2 cups chicken stock
1 cup uncooked rice
225g tinned tomatoes
Small tin corn kernels
1/2 cup chopped onion
1/2 cup chopped green capsicum
1/4 cup chopped celery
1 clove minced garlic
1/2 bay leaf
pepper, hot sauce & salt to taste

Method

*To make this dish less expensive, you can use frozen prawns which have been defrosted. Just add at the end of the process to warm through.
Heat vegetable oil in large pan and add sausage and chicken. Brown meat and then remove from pan.

Add onions, capsicum, celery and garlic to pan and sauté over low heat until onions are tender. Next add stock, tomatoes, bay leaf, salt, pepper, hot sauce and rice. Stir thoroughly and bring to the boil, then add meats. Cover pan, reduce heat and simmer for about 30 minutes, until chicken and sausage are tender.

Add corn kernels and prawns and cook until prawns turn pink, about 3-4 minutes.

Serve with crusty bread, good friends and a chilled Semillon Sauvignon Blanc.
