Brunch Burrito

A delicious way to start the day, this Brunch Burrito is easy to make and full of flavour with feta, spinach and bacon.

  • 2 large tortillas
  • 6 eggs
  • 100g middle bacon, cut into 1/2cm wide strips
  • 100g feta cheese, cut into 1cm cubes
  • 1 cup spinach
  • 1/4 small red onion, thinly sliced
  • 2 teaspoons olive oil
  • Salsa, to serve
  • Salt and pepper to season

Place eggs in a medium bowl and season with salt and pepper.

In a large frying pan, heat the oil over medium-high heat before adding the onion and cooking for five to seven minutes or until slightly browned. Add the bacon to the pan and heat through for about two minutes.

Add the eggs to the pan with the bacon and onion and cook, stirring constantly, until just cooked. Turn off the heat and fold the feta and spinach in until the spinach wilts.

Heat the tortillas in another frying pan over medium-high heat for about one minute on each side or warm in the microwave.

When warmed place on a plate and top with half the egg mixture in the lower centre of the tortilla. Drizzle with salsa before folding the bottom of the tortilla over the eggs and rolling so the eggs are completely covered. Repeat with the second tortilla.

Serve and enjoy.
