Ingredients
- 1 package (10 ounces) chopped frozen spinach
- 1/4 cup butter
- 2 tablespoons all-purpose flour
- 2 cups milk (or cream)
- 8 eggs, poached
- salt and pepper to taste
- grated Parmesan cheese or shredded mild Cheddar cheese
Method
Cook spinach according to package instructions.
Prepare white sauce. In a small saucepan, melt butter. Add flour; blend well. Gradually add milk (or cream), stirring constantly, until thickened and bubbly.
Place spinach in a lightly buttered shallow baking dish. Arrange cooked, drained eggs over the top of the spinach then pour white sauce over eggs. Sprinkle with salt, pepper and cheese. Bake eggs for 2 to 3 minutes, until cheese is melted and lightly browned.
Recipe for eggs serves 4.

You can make it in smaller quantities too – even for one person – using spinach frozen in individual portions (make sure its Belgian or New Zealand product, as I don’t trust the Chinese product). Just use a ramikin for each person, and first poach your egg(s) in the ramikin (put one-half cup cold water in the ramikin, break your egg into the water, and microwave – 800 watt – for 1 minute – the time may be more or less depending on how you like your egg). You can also use white sauce mix to make things even easier (the powdered kind is healthier than the ready made pouches, though it is still a little high in salt)
