One-dish Egg and Beans

A hearty breakfast is the best way to start the day and this simple Baked Egg and Beans is packed full of the protein you need to keep you going all day – well, at least until lunch.

One-dish Egg and Beans (serves two, or one really hungry person)
200g baked beans
2 eggs
1 tablespoon chopped chives
Spray oil
Toast to serve – optional

Method
Preheat oven to 1800C. Spray two small oven-proof dishes with oil. Divide the beans between the two bowls and crack an egg on each. Bake in the oven for 25 minutes, which will give you a nice, runny yolk in your egg. Remove from oven and sprinkle with chives. Serve with toast if desired.
