Wicklow Pancake

Despite its name, this is not your typical pancake, this dish is similar to a frittata or omelette. Serve for breakfast or brunch with your favourite Irish sausages.

4 large eggs
600 ml of milk
115g of fresh breadcrumbs
1 tablespoon of chopped parsley
1 tablespoon chopped thyme
2 tablespoons of chopped chives or scallions
Salt and freshly ground black pepper to taste
2 tablespoons of butter, or crème fraiche

Preheat grill. Lightly beat the eggs and add the milk, breadcrumbs, herbs and seasonings, and mix well. Heat 1 tablespoon of the butter in a pan until it foams, then pour in the mixture. Cook over a low heat until the pancake is brown on the underside and starting to set on top. Pop under the grill to finish off. Serve cut into wedges with a knob of butter or crème fraiche.
