Bush Brownies

From a collection of 500 recipes, brought together by the Country Women’s Association of Australia in Country Classics, Jessie of NSW shares her recipe for Bush Brownies, which you can throw together using ingredients commonly kept in your pantry.

2 cups sugar
2 cups water
2 cups sultanas
2 tablespoons margarine
4 cups flour
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
1 teaspoon mixed spice
1 teaspoon ground nutmeg


Preheat oven to 180°C and grease a cake tin. Boil sugar, water, sultanas and margarine for 3 minutes. Cool mixture, then stir in flour sifted with the bicarbonate of soda, cinnamon, spice and nutmeg. Bake for 75 minutes.

Delicious with a steaming mug of tea or coffee.
