Butter Cake

With minimum ingredients, this simple cake is all about the buttery deliciousness – perfect with a cuppa and to share with friends.

  • 1 egg yolk, for the glaze
  • 225g plain flour, sifted
  • 225g caster sugar
  • 225g butter, softened, plus extra for greasing
  • 6 egg yolks


Preheat the oven to 180°C. Grease the sides of a cake tin and line the base with baking paper. Whisk together the egg yolk with 2 teaspoons of water for the glaze and set aside. In a large bowl using a wooden spoon, mix together the flour and sugar, then add the butter and egg yolks and beat together until the mixture resembles a stiff dough. Pour into the prepared tin and brush with the glaze. Bake for 30 minutes, remove from the oven and allow to cool in the tin for 10 minutes, carefully remove the cake from the tin before placing on a wire rack to cool down completely.
