Campfire Cranberry and Chocolate Cake

When camping you don’t need to miss out on the simple pleasures in life. This Campfire Cranberry and Chocolate Cake is simple yet delicious and beats a marshmallow on a stick any day.


1 & 1/2 cups all-purpose flour
5 tablespoons unsweetened cocoa powder
1 cup granulated sugar
1 cup dried cranberries
1 teaspoon baking soda
1/2 teaspoon coarse salt
1 teaspoon cider vinegar
2 teaspoon vanilla extract
5 tablespoons canola oil
1 cup water


Place a grill on your campfire. The cake will be baked on an indirect heat so only have the coals under one side.
Grease a suitable cake tin. Add flour, cocoa powder, sugar, baking soda, cranberries and salt and mix to combine. Create three wells in the mixture. Pour the vinegar into one, vanilla in the second and oil in the third. Pour water over the entire mixture and stir with a wooden spoon until smooth. Ensure you get right into the corners so no dry ingredients are left un-mixed.
Cover with aluminium foil and place on the unheated side of the grill. Bake for about 35 minutes, or until a skewer inserted in the centre comes out clean. Rotate the pan now and again while baking to ensure the cake is cooked through.
Once baked, this cake is delicious served warm with some cream if you have to hand.
