Caramel Gateaux

1 egg
1/2 cup white sugar
1 cup plain flour
1/2 cup milk
1 teaspoon baking powder
4 tablespoons butter
1/2 cup brown sugar
1/2 cup (coarsely) chopped dates
1/2 cup (coarsely) chopped walnuts

Beat egg well, add white sugar, beat till creamy, then add flour & baking powder alternatively with milk.

Melt butter in deep cake tin & pour 1/2 into cake mixture. To the rest of the melted butter add brown sugar, dates & nuts. Pour the cake mixture over this & cook in a moderate oven for 1/2 an hour.

Leave to cool 5 minutes or so before turning out onto plate. If necessary, can be made day before.

Please note: Jan finds it easier to turn out if she lines the bottom of the greased cake pan with a round of ‘baking paper’. Heat slightly before serving.
